Scrambled Egg Mix

  1. Thaw in the refrigerator between 0-5°C, once thawed completely, the product must be kept refrigerated at all times, and used within 72 hours. Mix well before use.


  1. Preheat combi oven to 100°C and 100% steam.
  2. Place thawed product in oven – cook for 25 minutes.
  3. Turn bag over halfway through cooking time.
  4. Massage product inside the bag to break it up.
  5. Cut open bag and gently fork through to achieve desired consistency.

Note: can remove from bag and cook in gastronorm tray.

MICROWAVE (based on a 1100 watt)

  1. Measure out one cup of egg mix and place in microwave safe container
  2. Heat for 1 minute, take out and stir; heat for another 1 minute.
  3. Remove from microwave and let sit for 30 seconds.
  4. Fork through for desired consistency.
  5. Consume within 1 hour, keeping temperature above 65°C.

Stove top:

  1. Place egg mix in preheated frying pan or shallow pan
  2. Continuously stir on heat until product becomes opaque and firm – approx 10 minutes.
  3. Consume within 1 hour, keeping temperature above 65°C.

Boiled in Bag:

  1. Immerse thawed bag in 8L boiling water, cook for 15 minutes.
  2. Remove bag and massage to redistribute uncooked egg.
  3. Return for 10 minutes or until egg is firm (egg continues to cook for 1 minute after removing from heat).
  4. Cut open bag, fork through for desired consistency.
  5. Consume within 1 hour, keeping temperature above 65°C.

Cooked Scrambled Egg Mix must be kept refrigerated (0-5°C) and used within 3 days.
